Greek Yogurt Berry Trifle

This berry trifle with Greek yogurt is a delicious and simple to make dessert that I love to have for breakfast too, because that’s how I roll.

With fresh strawberries, blueberries and raspberries, this Greek yogurt trifle is a very light dessert. It’s low in calories and perfect for summer!

I love making it high protein, I just mix a scoop of vanilla protein powder with the yogurt and use my keto protein cake for the cake layers. It’s so good!

Ingredient notes

To make 4 individual trifles, you’ll need:

  • 2 cups of cubed cake
  • 2 cups of Greek yogurt
  • 1 1/2 cup of fresh berries
  • 1 scoop of vanilla protein powder (optional, to make a protein dessert or nutritious breakfast)

Vanilla protein powder – any protein type works, I prefer casein here because it makes the yogurt creamier.

Greek yogurt – Plain Greek yogurt has the least carbs, choose from full-fat or low-fat according to your macro goals.

Cake – Use your favorite cake! I will put the recipe below for my low-carb protein cake that’s a classic vanilla cake with simple keto and gluten-free ingredients. You can also use store-bought cake.

Fresh berries – I used fresh strawberries, blueberries and raspberries.

Fresh berries are a must in this recipe, for a delicious contrast in texture against the soft cake and the creamy yogurt.

Avoid thawed frozen berries, they are mushy and don’t taste good in trifle.

How to make yogurt trifle

Step 1. Chop the cake in small pieces or cubes.

Step 2. Mix the Greek yogurt and vanilla protein very well until it’s smooth and creamy. If you prefer not to add protein, you can use just Greek yogurt. Sweeten it to taste if needed.

Step 3. Make the trifle layers: Start with some Greek yogurt so the cake isn’t dry on the bottom. Then layer cake, berries, and yogurt. Repeat until the trifle glasses or dish is full. Finish with some berries on top to make it pretty!

You can serve it immediately, but it’s even better on the next day – that’s why I love having this yogurt trifle for breakfast!

If you can’t wait, let it stand for at least a couple of hours in the fridge, to let the flavors mingle.

Simple homemade cake for trifle

For the yogurt trifle layers you can use any vanilla cake. It can be store-bought cake, or you can prepare from a cake box mix like this keto one.

If you prefer to use a homemade cake, I suggest the one I used which is my Low-Carb Vanilla cake recipe with coconut flour and protein powder.

Dry ingredients:

  • Whey and casein baking blend, 3/4 cup (70g)
  • Coconut flour, 1/3 cup (40 g)
  • Powdered sweetener, 1/3 cup (75 g) – It improves the texture, you can powder granular sweetener in a blender yourself if needed.
  • Baking powder, 2 teaspoons
  • Pinch of salt

Liquid ingredients:

  • Large eggs, 3
  • Melted butter, 1/4 cup (57 g)
  • Milk of choice (any low-carb or regular), 1/2 cup (120 ml)
  • Vanilla extract, 1 teaspoon

The eggs are American large, if you’re in Europe use medium eggs which are the most approximate in weight.

How to make

Before starting:

  • Start heating your oven to 320 °F (160 °C) and
  • Line an 8-inch round pan with parchment paper (bottom and sides) and grease it with butter or oil spray. Now, here are the recipe steps:

Step 1. Mix all dry ingredients in a large bowl to fluff them up and combine. Make a well in the middle of the dry ingredients to add the liquids.

Step 2. Add 3 eggs, melted butter, milk and vanilla in the center of the bowl. Start mixing just in the middle and as the eggs are mixed start incorporating the dry ingredients, moving the mixer or whisk in larger circles.

Step 3. If you are using a hand mixer, stop and scrape the sides with a spatula a few times to ensure every little bit of the batter is well mixed.

Step 4. Transfer into lined and greased pan and bake in the preheated oven at 320 °F (160 °C) for about 30 minutes until the top is golden and the cake springs back when poked with a finger.

On average, one slice of an 8-inch round cake (assuming it’s cut into 8 equal slices) typically yields about 1 cup or a bit more of cubed cake when diced.

So, to make 4 individual trifles, each requiring 1/2 cup of cubed cake (totaling 2 cups), you will need about 2 slices or one-fourth of this cake.

Enjoy the rest of the cake by itself, or make more trifles!

Make ahead and storage

Trifle is the ideal make-ahead dessert because it tastes even better on the next day!

The leftovers can be stored covered in the fridge for up to 3 days.

Trifle doesn’t freeze well, so don’t make more than you’ll need.

Homemade low-carb cake for trifle

  • Start heating the oven to 320 °F (160 °C) and prepare an 8-inch round pan with a disc of parchment on the bottom and a strip of parchment around the sides. Grease the paper lightly with butter or oil spray.
  • Mix all dry ingredients in a large bowl until combined: 3/4 cup protein blend for baking, 1/3 cup coconut flour, 1/3 to 1/2 cup powdered sweetener, 2 teaspoons baking powder and 1 pinch salt.
  • Create a well in the middle of the dry ingredients and add 3 large eggs, melted (but not hot) 1/4 cup butter, 1/2 cup low-carb milk and 1 teaspoon vanilla extract.
  • Start mixing from the middle and as the eggs are mixed start incorporating the dry mix around it , scraping the sides. If you are using a hand mixer, stop and scrape the sides with a spatula at least a couple of times to ensure every little bit of the batter is well combined.
  • Transfer into the pan lined with parchment paper and greased and bake in the preheated oven at 320 °F (160 °C) for about 30 minutes until the top is golden and the cake springs back when you poke a finger in the middle.

  • Mix the 2 cups Greek yogurt and 1 scoop casein protein powder, vanilla flavored very well until it's smooth and creamy. If you prefer not to add protein, you can use just Greek yogurt. Sweeten it to taste if needed.
  • Make the trifle layers: Start with some Greek yogurt so the cake isn't dry on the bottom. Then layer cake, berries, and yogurt. Repeat until the trifle glasses or dish is full. Finish with some berries on top to make it pretty!

Notes

This recipe makes 4 1-cup servings of yogurt trifle. If you wish to make it in a large trifle dish for 8 servings, just double the amount of ingredients.
To make 4 individual trifles, each requiring 1/2 cup of cubed cake (totaling 2 cups), you will need about 2 slices or one-fourth of a 8″ cake. Enjoy the rest of the cake, or make more trifles!
If you’re making the cake recipe above, this protein baking blend ratio of 60% whey to 40% casein is the one that gives the best results. You can also use pure unflavored whey protein.
