This simple recipe makes a crispy tortilla pizza, with delicious crunchy thin crust and lots of melted cheese… it’s hard to eat only one!

Easy keto lunch, snack and dinner

This easy air fryer tortilla pizza is the perfect recipe for a light low-carb lunch or quick afternoon snack.

Although it’s an individual, one serve keto pizza recipe, it’s is so easy and quick that you can make as many servings as you need. So, you can even have a few for dinner!

And why not? If you make them with my pea protein keto tortillas, they are high protein (at 26 grams per pizza) and very filling. Not your usual empty-calorie pizza! Eat pizza to grow muscles – That’s my reason 😁

What are the best keto tortillas for pizza

If you are looking for the best store bought keto tortillas for pizza, the Mission brand tortillas are very well known and easy to find.

Until not long ago their most popular keto option was the Carb Balance tortillas, which has 4 net carbs per tortilla. But recently they have come up with the Zero Net Carbs tortillas, which are obviously even better with you need to keep your macros in check.

However, if you also eat gluten-free or try to avoid ultra processed foods (I don’t like using the terms clean and dirty for keto/food), than you probably want to stay away.

Personally, I think the ingredient list in Mission tortillas is a horror. With modified wheat starch, enriched bleached flour and vegetable shortening made from hydrogenated soybean oil, among other things.

Cooking tortilla pizza in air fryer

The air fryer is the best way to make a small pizza with a crispy crust! For two reasons:

First, it’s much quicker than making the pizza in the oven, where you have to wait for the whole oven to get to temperature which in itself takes more time than to make 4 of these keto tortilla pizzas in the air fryer.

Second, in the oven you’ll normally put the tortilla pizza in a sheet pan – after all, you don’t want to have to clean up melted burnt cheese and tomato sauce from the bottom of the oven, right?

But having the tortilla pizza resting on a pan won’t allow for an even crisping of the tortilla. Because in the air fryer the tortilla sits on a perforated basket, the hot air circulates all around and makes the tortilla get crispy and crunchy!

So, if you don’t want a soggy and limp pizza, air frying it is the way to go!

The ingredients

You’ll only need 5 ingredients for the LikeHotKeto air fryer tortilla pizza:

  • A low-carb tortilla, for the pizza crust
  • Pizza sauce: Rao’s pizza sauce is keto approved, or you can use this easy 2-minute keto pizza sauce recipe (no cooking!)
  • Mozzarella cheese – a generous amount!
  • You favorite pizza topping: Mine is pepperoni, but really you can use whatever you want! Read on for some flavor ideas!
  • Oregano or Italian seasoning – this is optional, but I think it’s what gives this simple keto tortilla pizza recipe that classical Italian pizza touch!

How to make

Here’s how to make this keto tortilla pizza: the recipe just can’t be any easier!

Start by adding a single low-carb tortilla to the air fryer, at the highest temperature. Generally, that’s 200 °C (400 °F). If your air fryer goes higher than this, you can use a higher temperature. The tortilla will crisp up even faster, so careful not to burn it!

Step by step of how to make the keto tortilla pizza in the air fryer recipe.

After about 3 minutes, remove the basket from the air fryer (keep the tortilla inside the basket). The tortilla should be getting golden in color.

Spread two tablespoons of keto pizza or marinara sauce on the tortilla, then add the mozzarella cheese. Don’t put the sauce or the cheese too close to the edges of the tortilla. Leave some empty space, so the fillings won’t fall down onto the bottom of the air fryer as they melt.

Add the pepperoni slices, or your personal choice of fillings, and put the basket back in the air fryer for another round at 200 °C (400 °F) until the cheese is melted to your liking.

The keto tortilla pizza is ready! Sprinkle some Italian seasoning or oregano as the finishing touch, and enjoy!

Recipe variations: more keto pizza toppings

The wonderful thing about pizza, besides how delicious it is, is that you can totally customize it with whatever toppings you like!

This air fryer tortilla pizza is no different, but there’s just one thing to keep in mind when choosing toppings:

Because this pizza is quickly air fried, just until the cheese melts, avoid using raw ingredients that need to be cooked. Raw ingredients won’t have time to fully cook before the tortilla burns.

So, the best toppings for tortilla pizza are the ones that are pre-cooked, or safe to eat raw.

Here’s some ideas:

Protein:

  • Any keto friendly deli meat
  • Ham
  • Prosciutto
  • Chorizo
  • Salami
  • Shredded rotisserie chicken
  • Canned tuna (well drained from liquid so the tortilla pizza won’t get soggy)

Veggies:

  • Mushrooms
  • Fresh tomatoes
  • Baby Spinach or arugula – add these under the cheese so they won’t fly off
  • Thinly sliced onions or shallots
  • Bell peppers
  • Jalapeños
  • Artichokes

More cheese:

It’s best to have a base of mozzarella or another quick melting cheese (like Edam, Gouda or Gruyère, for example) but you can top the first layer of cheese with even more cheese! (No, there’s no such thing as too much cheese!)

Combine different types of cheese for more flavor! Just add a smaller amount of a stronger tasting cheese over the mozzarella:

  • Blue cheese
  • Feta
  • Parmesan
  • Cheddar

Keto Tortilla Pizza in Air Fryer

  1. Put the pea protein tortilla directly inside the air fryer basket for 2-3 minutes at 200 °C (400 °F) to crisp it up.
  2. Remove air fryer basket. Top the tortilla with 2 tablespoons of keto pizza sauce, mozzarella cheese and pepperoni slices (or your choice of toppings).
  3. Return basket to air fryer and bake the pizza for 3 minutes at 200 °C (400 °F) or until the cheese is fully melted.
  4. Sprinkle high protein keto pizza with oregano or Italian seasoning and serve immediately.

Notes

* For convenience, you can use store bought low-carb tortillas, like Mission tortillas. Their zero carb tortilla is keto but not gluten-free. For a high protein keto and gluten-free tortilla option, you can make my simple pea protein tortilla recipe.

** You can use any other toppings! Try slices of ham, mushrooms, tuna in olive oil, shredded chicken, more (different types) of cheese, olives, etc.
