The CH in these chaffles stands for chicken, so you can make them with or without cheese! These chicken waffles are deliciously crispy and great for keto, low-carb and carnivore (plus dairy-free and gluten-free!)
Whisk together the melted butter and eggs, add the chicken flour and mozzarella (if using) and mix until fully combined.
Preheat the waffle maker as per the manufacturer's instructions. Let the batter sit for about 2 minutes while it preheats. The batter will thicken.
Grease the waffle iron with some butter as needed, quickly mix the batter again and pour or spoon onto the hot waffle machine (it makes 2 medium/large waffles).
Cook the chaffles for 3-5 minutes until golden. Don't open the machine to check until steam stops rising from the sides, or the waffles might break.
